20:1 water to coffee ratio
(e.g., 45g med-coarse-ground coffee with 900g water)
  1. Pour ¼ of the water (195-205°F or "just off boiling"), let bloom for 30 seconds then stir
  2. Pour remaining water and plunge just enough for the coffee to be submerged
  3. Steep 4 minutes then stir again
  4. Plunge slowly and decant into cup/thermos (best not to leave the coffee in the press)

15:1 water to coffee ratio
(e.g., 20g med-fine-ground coffee with 300g water or 25g to 375g)
  1. Slowly pour ¼ of the water (195-205°F or "just off boiling") in a spiral pattern and let bloom for 30 seconds
  2. Slowly pour 2nd ¼ of the water in a spiral pattern - wait 30 seconds
  3. Slowly pour 3rd ¼ of the water in a spiral pattern - wait 30 seconds
  4. Slowly pour remaining water in a spiral pattern
